Low Carb Ice Cream Recipe
66One of the hardest things about eating a low carb or diabetic diet is the lack of sweet things to enjoy. Well, here's some good news: You don't have to sacrifice taste to have a delicious, sugar-free treat.
Step one is to get yourself an ice cream maker. I really like the Cuisinart Pure Indulgence. It makes 2 quarts of ice cream and all you have to do is make sure to freeze the bowl beforehand.
Make sure you follow the directions for your ice cream maker to ensure proper freezing of your ice cream!
Ingredients
2 c half and half
1 c heavy whipping cream
1/2 c vanilla almond milk unsweetened
1 t vanilla
3 packets Truvia/Purevia stevia
1/2 c cocoa (optional)
Directions
Make sure you have followed your ice cream maker's instructions regarding freezing of the container. Keep the container in the freezer until you are ready to pour in the ingredients.
Mix the half and half, heavy whipping cream and almond milk. If you are making chocolate ice cream, mix the cocoa and the almond milk together before adding to the cream mixture. Whisk together. Add the vanilla and mix. Add the stevia packets. I like 3 packets, but you can add as many as you like to taste. Stir until the stevia is dissolved and the mixture looks uniform.
Assemble the ice cream maker. Pour in the mixture, turn on the maker and watch the magic happen! It'll be done in about 30-35 minutes (depending on how hard you want your ice cream).
Top with Reddi-Wip for extra yumminess!
